Timing is everything in uncorking wines

 

 

Q: How can you tell how long a wine should breathe before serving it?

A: There really is no tried-and-true formula because all wines are different, and there are so many factors that can affect the wine's "performance" once the cork is pulled. How old is the wine? What temperature is it? Has it recently been moved or shipped? Will it be served with food or on its own? All of these factors enter into the guesswork that I do whenever I ask myself the "how long" question.

What I suggest is that with young wines, white or red, you open them at least an hour before you plan to serve them. This allows you to check to make sure they are not corked (a musty, off smell) and to get a quick impression of the flavor.

Is the temperature right for serving, or does the wine need to be chilled or warmed? Are there pleasing aromas, or is it dumb? Does it show a lot of fruit in the flavors, or does it seem to be tight and unyielding?

The answer to these questions will give you some idea of whether or not to accelerate the wine's breathing by decanting it.

For an older wine, I would shorten the time between opening and serving. Wines that are very old — more than 10 years — may become quite frail and sometimes have a very short lifespan once they are open. But again, it varies with the type of wine, the vintage, the producer and the storage conditions.

I think of really old wines as being rather theatrical. Once the cork comes out, the curtain has gone up, and they start the act. It may be good, brief or ugly, but it starts immediately and you'd better be ready to enjoy it, because it's a one-act play and there won't be an intermission!
