Using Summer Salads to Control Cholesterol
New federal guidelines for managing cholesterol have been released. The guidelines, published in the Journal of the American Medical Association, increase the number of Americans who are treated for high cholesterol, either by diet or drugs, by roughly thirty-six million. The goal, according to the National Cholesterol Education Program, is to reduce the number of people who die of heart disease, which has reached the staggering number of 500,000 per year.
The guidelines recommend that adults try to lower their cholesterol by improving their diets and getting more exercise, before they try medication. And what better season to start making these lifestyle changes than summer? Even subtle changes in the way we eat can make a big difference. Many people, in fact, already feel that they are eating right, when they eat "healthy" foods like salads and fruits. But what goes on those salads counts too, and this is a fact that many of us like to ignore. Below, culinary consultant Laura Pensiero and nutritionist for the New York Mets, Heidi Skolnik, share some ideas about how to keep your salad healthy this summer. Q: Everybody knows that salads are good for us. What could be bad about a salad?
LAURA PENSIERO, RD: Most of the base ingredients in salads are excellent: fruits, vegetables, grain salads, legumes, beans. All are excellent. It is what we dress them with that tends to be the problem. Whether it is mayonnaise-based or oil and vinegar-based, that is where it catches up with you in terms of calories and fat.
Q: How much fat are you likely to find in salad dressing?
HEIDI SKOLNIK, RD: Let's take a Caesar salad as an example. People think, "Oh this is great. I'm getting my greens." But that salad could have fifty grams of fat in it. To put it in perspective, a sedentary female may have forty to sixty grams of fat a day as her total fat budget. So that one Caeser salad would take a good chunk out of her fat budget for the day.
Using a vinaigrette, a mustard-Dijon based salad dressing, a low fat salad dressing, and learning how to flavor in other ways makes a big difference.
Q: Are low-fat dressings readily available in restaurants?
LAURA PENSIERO, RD: No, I don't find that to be the case. The convenience types of restaurants, the cafes, and the cafeteria-style places are more likely to carry low-fat dressings. But if you cannot find a low-fat alternative, you can always order oil and vinegar on the side, and season it to your taste. That is a good option in some of the more posh restaurants where they do not make the low-fat salad dressings in the back.
HEIDI SKOLNIK, RD: Or get the full-flavor salad dressing that you like, but get it on the side. That is a very typical suggestion that we hear, and it makes a difference. You're controlling how much dressing is being put on the salad.
But remember, this business of fat control is always a balancing act. Your choices about salad dressing depend on what else you have eaten, and what else you plan to eat that day. Some of my clients-especially New York-based clients-are so fat-phobic that they have cut out fat entirely. And we need fat. Adding an olive oil-based dressing is a great way to get fat in your diet. It is a healthy fat. It is going to depend on what other choices you are selecting throughout the day as to whether you need to avoid it or limit it.
Q: So it seems that the real goal here is to get realistic about food, and not lie to yourself about how much you actually need in a day?
HEIDI SKOLNIK, RD: Exactly. Dessert, for instance. Some nutritionists say, "Just don't eat it." I am not a very prudent nutritionist in that way. But if you are having the steak with the potatoes in the mayonnaise-based dressing and buttered corn, and then you are going to go for that triple cheesecake chocolate fudge thing, do you really need me to tell you if that is a good idea? You do not need a masters degree to know that's not going to work.
LAURA PENSIERO, RD: Sometimes it is just worth it to just go with one bite of something that is just naturally excellent and rich to satisfy exactly what you want and let it go. Then there are other times to go for the low-fat frozen yogurt.
