Can you dress a salad without oil?
I know exactly what you mean about the texture of those ready-made dressings. I suspect that because they are sold in glass jars the manufacturers add something to hold the dressing together so that it doesn't separate. I wouldn't touch them with a bargepole.
The easiest way to cut down the oil in a dressing is to add a little cold water in with the oil. It thins the dressing down but will still bring all the ingredients - oil, vinegar or lemon, salt, garlic and pepper together. It is bets made in a jar with a lid, shaking it violently to mix.
I normally make my dressings one part vinegar to four or five parts oil - others use 1:6. So you could try a teaspoon of mustard, a tablespoon of white or red wine vinegar or lemon juice, two tablespoons of water and two of oil.
You could also use fresh orange juice. mind you, I am not sure two tablespoons of oil a day will make much difference in terms of reducing your fat intake.
Olive oil is so beneficial in health terms and so delicious I would rather cut down on something else.
