What is tamarind?

 Tamarind is what gives Thai and much South East Asian cooking its character. I have picked the long brown tamarind pods from the tree in Thailand and have watched whilst the sweet-sharp brown paste inside is squeezed out.

The large seeds have to be removed from this before it can be used. I used to avoid using tamarind because preparing it involved a lot of faffing around. Now it is so much easier.

Blue Dragon make neat little sachets of ready prepared paste which you buy from health food shops and supermarkets. It is pure tamarind without the seeds and fibres.

 

Just drop it into a small basin of warm water and rub it through your fingers; it will partially dissolve. You can rub the rest through a sieve into the water.

Now use the water to flavour soups and curries. Alternatively, soften the blob of tamarind in water, then push it through a tiny sieve into an empty bowl.

Use the resulting purée (there will not be much). The amount you use will depend on how tart you want your soup or curry to be.

I like to add quite a bit, but it really a matter of taste, so keep stirring in and tasting as you go.
