How can I make a low fat pasta sauce?

  Pasta, bless it, is something that will correspond to our every mood. So if we like gentle flavours it will take them, if we want something loud then it will take that too. I sometimes wonder just what we would do without it.    Strong flavours that work well with pasta include Parmesan, tuna, capers, anchovy, garlic and chilli. You can mix and match them as much as you like, adding a fruity olive oil rather than the softer flavoured butter or cream.

Two really powerful sauces spring to mind that you might like. Firstly - and please don't take this personally! - is Pasta Puttanesca (Puttaneca is the Italian for hooker) which is a deeply flavoured sauce based on tomato and capers.

Heat a little oil in a frying pan, add chilli flakes, some chopped garlic and a feww chopped anchovies. Cook over a medium heat until the anchovies are distingrating then turn the heat up add a tin of chopped tomatoes (tinned tomatoes are often better than fresh for winter pasta sauces).

Simmer for 15-20 minutes till thick then stir in a few small, pitted olives and a few capers. Salt to taste. Another favourite for strong flavours is the Arrabbiata.

 

Cook a chopped onion till soft in a little oil with some garlic, and crushed chilli flakes  (you need a good teaspoon of chilli flakes to 1 onion and 3 cloves of garlic) then stir in crushed tomatoes, salt and pepper and continue cooking till all is sloppy.

Toss the cooked pasta in the sauce and serve. Of course the amount of chilli you add is entirely up to you, but I would start with a teaspoon and see how you go.
