How do you pot shell fish?
My favourite is potted shrimps, but you can pot salmon and crab too. The spicing is important. Food to be eaten cold always needs just that little bit more.
A traditional spice to use is ground mace. You only need a little. It has a warm and mildly earthy quality to it and is so rarely used nowadays.
Its flavour is perfect for an old fashioned recipe like potted salmon. The other seasoning I recommend is anchovy essence, just a little really brings out the flavour of the seafood, especially shrimp.
But you do only need just the smallest amount. Oh, and don't forget the black pepper.
Clarifying butter is easy. You simply melt the butter in a small saucepan over a low heat and set it to one side to cool.
Do not stir or shake it. As it cools you will see a yellow froth rising to the surface. Carefully scoop the froth from the top, and discard it. The clear yellow liquid is the clarified butter.
Make sure that when you use it, you leave behind the white sediment that sinks to the bottom.
