Recipes for day one of the X Factor diet

  Energy Salsa:
What you need:
2 cloves of garlic, finely chopped
Half a red onion, finely chopped
Handful of fresh coriander, chopped
Handful of fresh basil, finely shopped or two tbsp fresh mint, chopped
Handful of broadleaved parsley, chopped
Green or red chilli pepper, roughly chopped (after removing the seeds)
One large tomato, roughly chopped
One large green pepper, roughly chopped
Maldon sea salt to taste
Freshly ground black pepper to taste
Three tbsp extra virgin olive oil
Three tbsp lemon or lime juice

How to make it
Mix everything together in a bowl and chill in the refrigerator. It takes this chilling process to let the ingredients in salsa meld properly. I like to keep my salsa fresh and would never keep it in the fridge for more than 48 hours.

Usable carbohydrate 9g

Spicy nuts:
Serves five
What you need
2 tbsp coconut oil
250g (9 oz) almonds
A quarter to half a tsp of Cajun seasoning
Half a tsp of vegetable bouillon powder

How to make it
Place the coconut oil in the bottom of a heavy frying pan - big enough to allow the nuts to sit in it side by side so that they get evenly toasted. Heat the oil until it shows a hint of smoke, toss in the nuts, turning them frequently so they don't burn. Take them out to cool on kitchen paper towels. meanwhile, mix together Cajun seasoning and bouillon powder. While the nuts are still warm, place the nuts together with this mixture in a paper or plastic bag or jar and shake vigorously to coat.

Vanilla-flavoured Protein Whip:
Lesley says: 'I make toppings for low glycaemic carbohydrates such as berries or melons using microfiltered why protein. It's the easier thing in the world to do. I prefer to work with microfiltered whey protein that is either vanilla flavoured or with no flavour at all. I try to avoid cream myself - except very occasionally - since I find it lowers my energy. This is a recipe you can also make with heavy cream if you prefer. Here are two versions of a mind of whipped topping - take your pick.'

Version one - Cream based
What you need
200ml (6 and a half fl oz) double cream
1-2 scoops of microfiltered whey protein (enough to yield 20g of protein)
Artificial sweetener to taste (stevia extract or the white sucralose powder works here otherwise you end up with green cream).
Flavouring (pure vanilla, coffee, chocolate or strawberry essence or naturally flavoured oil). How to make it
Whip all the ingredients together, preferably using an electric mixer, in a bowl until thick and blended thoroughly. Serve chilled.

Protein 20g per recipe
Usable carbohydrate 6g per recipe

Version 2 - pure protein
What you need
A few scoops of microfiltered whey protein (enough to yield 40g of protein)
Artificial sweetener to taste
1 tsp pure vanilla, coffee, chocolate or strawberry essence or naturally flavoured oil
200ml (6 and a half fl oz) unsweetened soya milk

How to make it
Mix everything together in a medium size bowl with a beater or blender. Chill and serve. Do not mix for more than 20 seconds at a time. This can denature the protein.

Usable carbohydrate 7g per recipe
