New test detects nut traces in food
Scientists have developed sensitive new tests to detect potentially fatal traces of nuts in foods, it emerged today.
Nut allergies can cause rashes and difficulties in breathing, and in extreme cases can lead to anaphylactic shock and even death if treatment is not given quickly.
With no treatments available to cure nut allergies, the best way to avoid a reaction is to eliminate nuts from the diet.
But products are sometimes cross-contaminated in the manufacturing process and poor labelling can leave nut allergy sufferers unaware what they contain.
The latest research, published in Science of Food and Agriculture, discovered sensitive "marker proteins" which could be used to detect even the smallest amounts of nuts in processed foods.
But the researchers said more work needed to be done before the tests could be used on the market.
The team, from Florida State University and the University of California, originally set out to find ways of processing nuts to make them safe for allergy sufferers.
But it was the techniques developed during this analysis which led to the discovery of the markers which could show up traces of nuts.
The researchers, led by Prof Shridhar Sathe, looked at walnuts, cashews and almonds - the three most common tree nuts that produce allergic reactions.
In past studies the team had already identified specific proteins relevant to human allergies - almond major protein (AMP), cashew major protein (CMP) and walnut glutelin (WG).
They tried to change these proteins to reduce the allergenicity of the nuts by subjecting them to gamma radiation and thermal processing.
These processes had no effect on the allergens. However, the study proved that the new tests could still detect allergen traces in both raw and processed nuts, the researchers said.
Prof Sathe said more work was needed to make the tests ready for use in the market place.
"The development of specific, reliable, sensitive and accurate tests for allergy-related proteins has significant implications for the food industry and for consumers who daily rely on accurate labelling.
"Therefore continued and vigorous research is urgently warranted."
