A light, mild-tasting oil, it is highly polyunsaturated. Its delicate fatty acids can degrade unhealthily on heating, but it is rich in vitamin E which helps protect against this to some degree.

Pros: Sunflower seeds are a potent, concentrated food, rich in protein, the building block of body tissue, B-complex vitamins and iron, zinc, potassium and selenium, a brilliant antioxidant mineral. They are also a great source of the antioxidant vitamin E, which boosts the immune system, neutralises the free radicals in the body that cause clogged arteries and other diseases and is vital to healthy brain functioning. Studies show that selenium and vitamin E are 'synergistic', meaning that when together in one food, the effectiveness of both is increased dramatically.

Cons: People who are trying to lose weight should be aware that, like most nuts and seeds, sunflower seeds are high in fat. If eaten as an occasional snack, this should not pose a problem to most people. Make sure your sunflower seeds are a uniform grey colour. If a yellow-brown, they are rancid and should not be eaten.
